Please also keep in mind that each food truck’s hours may vary or change. Check their social media accounts, which are linked, for each of the trucks’ current hours. If there’s one thing all of the food trucks at the Silos have in common, it’s that each of them houses some of the best local eats in town. You can’t go wrong with any one of them. Whether you’re looking for breakfast, lunch, dessert or a quick snack, there is something for everyone. We hope this tour of our food trucks gives you a little insight into what you can expect here on the Silos grounds next time you’re in Waco! LITTLE BRISKET by Guess Family Barbecue There is no shortage of delicious barbecue in Texas, and Little Brisket is no exception. Little Brisket is a food truck by Guess Family Barbecue, and from the brisket melt (pictured below) to the pulled pork sandwich, we don’t think you can go wrong. Hours | 11am to 6pm, Monday through Saturday Pro Tip | Little Brisket serves breakfast! CHEDDAR BOX We love how Cheddar Box has reimagined the grilled cheese. From different kinds of cheeses to toppings like bacon, basil and guacamole, they have mastered grilled cheese combinations. This truck is loved by visitors and locals alike, so stop in and give one (or a few) menu items a try! Hours | 11am to 6pm, Monday through Saturday Pro Tip | They offer a sandwich and mac ‘n cheese combo deal for those who can’t decide on just one option. It’s called the “Power Couple.” CLUB SANDWICH If you’re looking for something out of the ordinary, then you’re going to love Club Sandwich. Don’t be fooled by the name—they’re actually an Asian Fusion food truck, with not a single sandwich on the menu. They specialize in what they call Trashcan Bowls: a bed of rice covered in your meat of choice, veggies and drizzled with one of their signature sauces. Hours | 11am to 6pm, Monday through Saturday Pro Tip | This is one of Jo’s favorite lunch spots! She likes the Trashcan Rice Bowl with chicken and a mix of cilantro lime and sriracha ranch. 900 DEGREES PIZZERIA This pizza spot allows you to build your own pizza or choose from their menu, making it a spot where everyone can find something they love. A fun fact about 900 Degrees—they source their ingredients from Italy! Hours | 11am to 6pm, Monday through Saturday Pro Tip | Try the margherita pizza (pictured) with chicken on top! CARAMEL CART If you’re looking for something sweet, the Caramel Cart is a good stop. They’re serving up whole and sliced apples covered with a buttery, smooth caramel sauce and toppings. (In the warmer summer months, the Caramel Cart transforms into Summer Snow, a snow cone stand!) Hours | 11am to 6pm, Monday through Saturday Pro Tip | The sea salt and pecan topping combination on the caramel apple bowl (pictured) is one of our favorites. LUNA JUICE Luna Juice bar is a food truck that serves up fresh-pressed juices and smoothies. They have a variety of fresh juice blends with no additives, preservatives or added sugars of any kind. Our favorite treat from Luna Juice is the Blended Watermelon. It’s a summer special served up in a personal-sized watermelon, and is definitely one of the most “Instagrammable” menu items at the Silos. Hours | 11am to 6pm, Monday through Saturday Pro Tip | If you get the chance to meet the owner, Summer, ask her about the mission behind Luna Juice Bar. We love working with such inspiring people! MAGNOLIA TABLE TRUCK If you’re wanting to try out Magnolia Table, but need something on-the-go, check out our Magnolia Table food truck! They’re serving several menu items straight from the restaurant, like pimiento cheese and chicken salad sandwiches, as well as early morning favorites like breakfast tacos and biscuits with strawberry butter. Hours | 8am to 6pm, Monday through Saturday Pro tip | To visit the sit down Magnolia Table restaurant located about 10 minutes from the Silos, head to this page for more info. At the restaurant you can also find our Take Away + Market with a few additional on-the-go treats. CAPTAIN BILLY WHIZZBANGS A good burger and fries hits the spot any season of the year. The truck has two burger options, the first is a classic beef and the other is their signature bacon and beef blend burger. All of their burgers are served fresh right off the grill. Hours | 11am to 6pm, Monday through Saturday Pro Tip | Ask them about their Whizzbang fries! H.O.T. DOG HOUSE The Heart of Texas Dog House (aka the H.O.T. dog house) serves up gourmet hot dogs, sausages and bratwurst. There are so many different topping combinations you can choose from! Our personal favorite is the BLT hot dog—a hot dog wrapped in bacon, served with tomatoes, lettuce and drizzled with peppercorn ranch. Hours | 11am to 6pm, Monday through Saturday Pro Tip | If you’re looking for something gluten-free at the Silos, they offer a chili bowl “Dog Pile” option for you. SILOS BAKING CO. If you need a sweet treat to go, you can grab a Silos Baking Co. cupcake or a cookie at our airstream trailer. Hours | Monday, Friday and Saturday, 9am-6pm. Hours may vary. Pro tip | The airstream also sells coffee. Try an iced coffee with a flavor added: caramel, vanilla or lavender! CHUCK’S GOURMET POPCORN Chuck’s Gourmet Popcorn has classic flavors like Kettle Corn and Homestyle (Butter) to gourmet flavors like their Cinnamon Toast and Salted Caramel popcorn. When they are making a fresh batch, you can smell it across the Silos grounds. This stop really does make for a great afternoon snack. Hours | 11am to 6pm, Monday through Saturday Pro Tip | If you’re on your way back to the car, grab a bag for the road trip home. ALABAMA SWEET TEA This truck is famous for its freshly brewed iced tea. Not only do you get a drink, but a reusable glass jar, too. Try yours sweetened, unsweetened or snag the Mason Dixon—half sweet and half unsweet. Hours | 11am to 6pm, Monday through Saturday Pro Tip | Bring your jar back for a half price refill!
