INGREDIENTS

Hollandaise Sauce 

  • 4 large egg yolks 
  • 1 tablespoon fresh lemon juice 
  • 1 teaspoon Dijon mustard 
  • ¼ teaspoon kosher salt 
  • ½ cup (1 stick) unsalted butter, melted and hot  

Eggs Benedict 

DIRECTIONS

1. Preheat the oven to 400°F. Line a sheet pan with parchment paper. Arrange the frozen Prize Pig Biscuits on the prepared pan and bake for 18 to 20 minutes, or until golden brown. 

2. Meanwhile, prepare the hollandaise sauce. In a tall liquid measuring cup, combine the egg yolks, lemon juice, Dijon mustard, and salt. Using an immersion blender, blend until smooth, about 30 seconds.

3. Place the butter in a separate liquid measuring cup and microwave until melted and hot. With the immersion blender running, slowly pour the hot butter into the egg yolk mixture in a slow, steady stream. Continue blending until all the butter is incorporated and the sauce is thick, smooth, and fully emulsified. Keep warm until ready to serve.

4. To assemble, split each biscuit in half and place open-faced on plates. Top each biscuit half with a slice of bacon and a poached egg. Spoon about 2 to 3 tablespoons of hollandaise sauce over each egg. Finish with freshly cracked black pepper and serve immediately.
