Ingredients
- 1 tablespoon vegetable oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 tablespoons Spice Mix, recipe follows
- Two 14 1/2-ounce cans black beans
Spice Mix
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
Directions
- In a medium saucepan or skillet, heat the oil over medium-high heat. Add the onion and garlic and cook until starting to brown, about 2 minutes. Add the spice mix and beans and stir to combine. Reduce the heat to medium low and cook until the flavors meld, about 20 minutes. Serve warm.
- In a small bowl, combine the paprika, chili powder, oregano and cumin and mix well.
