We took inspiration from the viral TikTok upside-down puff pastry creations originally credited to a hack from @lilyghodrati.
Ingredients
One 16-ounce box frozen puff pastry (2 sheets), defrosted
8 tablespoons honey
12 sprigs thyme
6 fresh peaches or apples, pears, or plums, thinly sliced
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1 large egg
1 tablespoon milk
Fresh whipped cream or ice cream, for serving
Directions
Preheat the oven to 425℉. Line 2 baking sheets with parchment.
Lay out puff pastry and cut into 12 rectangles. Drizzle 2 teaspoons of honey on the parchment paper spaced apart for each of 6 tarts on each prepared baking sheet. Place 1 sprig of thyme on each honey drizzle. Depending on the size of fruit slices, layer them slightly overlapping on top of the honey and thyme about an inch shorter than the length of the cut puff pastry pieces. Sprinkle the peaches with cinnamon and a tiny pinch of salt. Top with the pastry pieces and gently press down on the edges to cover the fruit.
In a bowl, whisk the egg with the milk. Brush on the top of the puff pastry. Bake until golden brown and puffy, 15 to 20 minutes. Remove from the oven and let sit for 2 minutes. Carefully flip each tart over to serve. Top with whipped cream or ice cream.
