Crunchy Chicken and Peanut Salad with Peanut Sauce

Ingredients
Peanut sauce
  • 1/4 cup smooth peanut butter
  • 2 tablespoons honey
  • 1 1/2 tablespoons soy sauce
  • 1/2 tablespoon grated fresh ginger
  • Juice of 1 lime
  • 1 teaspoon chili oil
  • 1 teaspoon sesame oil
  • 1 garlic clove, grated
Salad
  • 1 cup shredded roast chicken
  • 10 ounces soba noodles, cooked, rinsed, and cooled
  • 3 large radishes, julienned
  • 1 handful snow peas, julienned
  • 1/2 cucumber, seeded and julienned
  • 2 green onions, white and green parts, thinly sliced
  • Handful fresh cilantro, roughly chopped
  • Handful fresh mint, roughly chopped
  • Handful fresh basil, roughly chopped
  • 1/2 cup roasted salted peanuts
  • 1/2 tablespoon sesame seeds
    Directions
    1. To make the peanut sauce: In a small bowl, mix the peanut butter, honey, soy sauce, ginger, lime juice, chili oil, sesame oil, and garlic together. Set aside.
    2. To make the salad: In a bowl, combine the shredded chicken, cooled soba noodles, radishes, snow peas, cucumber, green onions, cilantro, mint, basil, and most of the peanuts. Pour the sauce over the salad and toss to combine. Garnish with the remaining peanuts and the sesame seeds.
