Bacon Radishes

Makes 4 to 6 servings
Ingredients
  • 2 to 4 slices bacon (4 if the slices are thin), cut into thick pieces
  • 1 bunch radishes, cleaned, trimmed, and halved (quartered if large)
  • Kosher salt and freshly cracked black pepper
  • 2 tablespoons chopped fresh dill
    Directions
    1. Heat a large skillet over medium heat. Add the bacon and cook until it starts to render fat and browns, about 4 minutes. Raise the heat to medium-high. Add the radishes to the skillet cut-side down. Cook until the radishes are dark brown, then flip and cook until the radishes have softened, stirring occasionally, about 7 minutes.
    2. Season the radishes with salt and pepper. Sprinkle with dill and serve warm.
