1 teaspoon garlic powder or 3 to 4 grated garlic cloves
1/2 teaspoon kosher salt
3 to 4 tablespoons ghee
Directions
In a large bowl, combine the yogurt, flour, baking powder, garlic, and salt. Dip your hands in flour and knead the dough until a ball forms. Cover with a towel and let sit for at least 10 minutes or up to 30 minutes.
Cut the dough into 4 equal pieces and form each into a ball. Lightly dust a work surface with flour. Flatten a ball into a disk with a rolling pin, or gently stretch it with your fingertips. Roll the dough out until it is about 1/4 inch thick. Repeat with the remaining dough.
Heat a cast-iron skillet over high heat. Brush a piece of dough with ghee on one side. Place it with the ghee side down in the skillet. Brush the other side with ghee. Cook for 3 to 5 minutes on each side until golden brown and charred in some spots. Transfer to a plate and keep warm by covering it with a clean kitchen towel until ready to serve. Repeat with the remaining dough.
