Grilled Turkey Burgers with Zucchini and Feta

Makes 4 burgers
Ingredients
  • Vegetable oil, for oiling the grates and patties
  • 1 pound dark meat ground turkey
  • 4 ounces feta cheese, crumbled
  • 1 cup shredded zucchini (about 1 small zucchini)
  • 1/4 cup finely chopped fresh dill
  • 3 to 4 green onions, minced
  • 1 garlic clove, grated or finely minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 4 soft brioche buns
  • 3/4 cup creamy hummus
  • 1 cup mixed baby greens
Directions
  1. Preheat your grill on medium-high heat, about 400°F. Clean and oil the grill grates.
  2. In a large bowl, combine the ground turkey, feta, zucchini, dill, green onions, garlic, salt, and pepper. Use your hands to mix everything together until evenly combined.
  3. Form the mixture into 4 patties, flattening them down to roughly 4-inch disks. Poke a small indentation in the middle of each with the tip of your finger. Place on a small sheet pan or plate and lightly oil both sides of the patties.
  4. Place the patties on the grill, close the lid and cook for 6 to 8 minutes. Using a spatula, flip the patties and cook, covered, for another 4 to 6 minutes or until cooked through and the internal temperature reads 160°F. Remove from the grill and let rest for 3 to 5 minutes; the residual heat will continue to cook the burgers until they reach 165°F.
  5. To assemble, place a burger on the bottom of a bun and top with a scoop of hummus and a handful of greens. Cover with the top buns and serve.
