Eduardo Garcia's Guacamole

Makes 8 servings
Ingredients
  • 2 roma tomatoes, seeded and chopped
  • 1/2 red onion, chopped
  • 1 handful fresh cilantro, chopped
  • Juice of 2 limes
  • 1 teaspoon jalapeño seasoning blend (such as Montana Mex), plus more to taste
  • 1 teaspoon kosher salt, plus more to taste
  • 4 ripe avocados, halved, pitted, and scooped out of skins
    Directions
    1. In a large bowl, combine the tomatoes, red onion, cilantro, lime juice, jalapeño seasoning, and salt. Stir to combine. Add the avocado and, using the back of a fork or a potato masher, break up the avocado and mix into the other ingredients. Taste the guacamole and add more salt and jalapeño seasoning, to taste. Serve immediately or cover with plastic wrap pressed against the surface and refrigerate for up to 5 hours.
