Apple Baked Beans

Ingredients
  • 2 tablespoons unsalted butter
  • 1/2 yellow onion, diced
  • 3/4 cup lightly packed light brown sugar
  • One 55-ounce can baked beans
  • 1 small Granny Smith apple, peeled and cut into generous 1/4 inch dice
  • 2 tablespoons bourbon
  • 2 tablespoons yellow mustard
  • 2 tablespoons Worcestershire sauce
  • 6 strips cooked bacon, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
    Directions
    1. In a large Dutch oven, melt the butter over medium heat, then add the onion and cook, stirring often, until translucent, about 2 minutes. Stir in the brown sugar and cook until the sugar has dissolved. Add the baked beans, apple, bourbon, mustard, Worcestershire, bacon, salt, and pepper and stir to combine. Bring to a boil, turn the heat down to a simmer, cover and simmer until the apple is tender and the flavors have melded, 23 to 30 minutes.
    2. Allow the beans to cool for 15 minutes before serving warm.
