Weeknight Salmon

It’s easy to get behind eating meals that taste good or satisfy a certain craving.  For me, that often means a lot of comfort foods and sweets, or any dish that celebrates butter.  But there’s something to be said for taking time to fuel up on meals that make you feel good.

So whenever we’re craving something simple and light, Weeknight Salmon is one of our go-tos. I usually pair it with potatoes, but today I’m complementing the salmon with sides that are equally bright and fresh—like Lemon Orzo and a colorful Butternut Squash and Spinach Salad. And just because we’re making a meal on the healthier side doesn’t mean we have to skip dessert, so I’m whipping up Panna Cotta (a sweet Italian custard) and topping it with one of my favorite fruits—Spiced Pears.

This meal is a good reminder that healthy food doesn’t have to be boring or difficult to make. In fact, it can taste delicious, look beautiful, and help us take care of ourselves and the people we love.
