Makes about 1 cup
Ingredients
1 large egg
1 garlic clove, peeled
1/2 teaspoon kosher salt, plus more for seasoning
1/2 teaspoon fresh lemon juice
1 cup mild extra virgin olive oil, preferably made from arbequina olives
Directions
In the bowl of a food processor, add the egg, garlic, salt, and lemon juice and blend until very fine.
Add olive oil in a slow, steady stream while the food processor is running, until all olive oil is added, and the mixture appears smooth and homogenous.
