Makes about 1 cup
  • 1 large egg
  • 1 garlic clove, peeled
  • 1/2 teaspoon kosher salt, plus more for seasoning
  • 1/2 teaspoon fresh lemon juice
  • 1 cup mild extra virgin olive oil, preferably made from arbequina olives
    1. In the bowl of a food processor, add the egg, garlic, salt, and lemon juice and blend until very fine.
    2. Add olive oil in a slow, steady stream while the food processor is running, until all olive oil is added, and the mixture appears smooth and homogenous.
    3. Season with additional salt to taste.
