Spiced Black Beans

Makes 4 to 6 servings
Ingredients
1 tablespoon vegetable oil
1 yellow onion, diced
2 cloves garlic, minced
2 tablespoons Spice Mix, recipe follows
Two 14 1/2-ounce cans black beans
Spice Mix
1 tablespoon smoked paprika
1 tablespoon chili powder
1 tablespoon dried oregano
1 tablespoon ground cumin
Directions
In a medium saucepan or skillet, heat the oil over medium-high heat. Add the onion and garlic and cook until starting to brown, about 2 minutes. Add the spice mix and beans and stir to combine. Reduce the heat to medium low and cook until the flavors meld, about 20 minutes. Serve warm.

In a small bowl, combine the paprika, chili powder, oregano and cumin and mix well.
