Spiced Black Beans

Spiced Black Beans

Makes 4 to 6 servings
Ingredients
  • 1 tablespoon vegetable oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons Spice Mix, recipe follows
  • Two 14 1/2-ounce cans black beans
    Spice Mix
    • 1 tablespoon smoked paprika
    • 1 tablespoon chili powder
    • 1 tablespoon dried oregano
    • 1 tablespoon ground cumin
      Directions
      1. In a medium saucepan or skillet, heat the oil over medium-high heat. Add the onion and garlic and cook until starting to brown, about 2 minutes. Add the spice mix and beans and stir to combine. Reduce the heat to medium low and cook until the flavors meld, about 20 minutes. Serve warm.
