Makes 4 to 6 servings
  • 1 clove garlic, minced
  • 1/2 cup mayonnaise
  • 2 tablespoons pickle juice
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon chopped chives
  • 1/4 teaspoon chile powder, such as ancho, guajillo, or a blend of chiles
  • 1/2 teaspoon sea salt
    1. Place the garlic in a jar with an airtight lid and add the mayonnaise, pickle juice, lemon juice, chives, chile powder, and salt. Shake well until the mixture is smooth and everything is combined. Serve drizzled over root vegetable hash or other dishes.
